Roasted Chicken

The other day one of my friends called me up randomly and asked me to go to the store with her. She'd never been to this one particular grocery store (think more like a market) and so she wanted some company. I went with her and we had a great time chatting and going up and down the few aisles. While there, she convinced me that cooking a whole chicken was very easy and made for a very delicious meal. Ok, I'm game. She uses a middle eastern spice mixture on hers when she cooks it... I...well...I'm not so much into those kinds of spices unless they are being served to me in a local's home. So, I decided to hop onto allrecipes.com, my favorite cooking website, and see what I could find.

I found this little gem: http://allrecipes.com/recipe/simple-whole-roasted-chicken/detail.aspx. Now, there are over 500 reviews. I read about the first 10 and found them very helpful.

So. I followed this recipe, but made the following changes: I doubled the spices that it listed. I didn't have any nutmeg, but I did have a mixture of nutmeg/cinnamon/allspice that I put 1/4 tsp of in, along with 1/4 tsp of cinnamon. I also did some rosemary and about 1/4 tsp pepper. I marinated the whole thing for about 3 hours. Then, I put not only the garlic cloves into the cavity of the chicken, but also 1/4 of an onion. I added 1 cup of water to the dish, along with cut up potatoes and carrots and a few onions. Then I baked/roasted the whole thing for about an hour at 400. (My oven wouldn't go up any higher! But it proved to be enough.)

The consensus was that it was excellent! Delicious, in fact! And it certainly will be made again! Brad even went so far as to say that it was one of my best meals of all time! Can you believe it? And actually, the veggies were everyone's favorite! They were gone before all the chicken...and the chicken was fantastic, yes, I do say so myself :)

  3. I've never cooked a whole chicken before! I will take your recommendation (and really, your hubby's, because we know, we usually end up cooking to please our men!) and try it out!
